After reading the 1 five star review we decided to pull over in Hatch just to meet Chili! I am sad to report all that is let of Chili Wilie's is Chili on the sign! There is, however, a Hatch Chili Express close by with all things chili to make up for the loss. Sorry to report the news!

Due to severe winter weather conditions that prevented us from taking our usual northern route, we drove the southern route back to our home in the Midwest. We opted to take the "shortcut" at Deming and that proved to be a highlight of the trip as we ended up traveling through Hatch, NM. We had heard of and even eaten some of the wonderful Hatch chilies grown in that region but had never had the opportunity to visit the small town itself. We drove past several roadside stands before we elected to retrace the few blocks of our drive so we could visit Chile Willie's Store. What a great experience it was. Best of all was meeting Angie, the sister of Willie, who could not have been more friendly and helpful. She answered all our questions about Hatch, the chile pods, the crushed chilies, and the fresh pecans she had for sale. She offered helpful tips for cooking with the products and provided some recipes that made this Midwesterner's mouth water. I've made a red chile sauce from my Hatch peppers and could tell such a difference in the taste. So, if you're anywhere near Hatch, it's worth driving a few miles out of your way to enjoy the wonderful NM hospitality at Chile Willie's.
